JOHN Day has high hopes of becoming Britain's Young Butcher of the year and his boss, Tom Courts, reckons that he is shining example of how youngsters can make the best of their talents.

The Dunfermline man will be in London, on 16th November, as one of three finalists in the UK wide competition.

John (20) has worked for Cowdenbeath based Tom Courts Quality Foods for four years having left school with no qualifications at all.

Said Tom, "John started with us as a real raw recruit but soon showed a lot of enthusiasm and the ability to pick up tips quickly from his more experienced colleagues.

"His progress was swift and he quickly gained his SVQ qualification through his application and hard work."

Such has been John's progress he is now in charge of the manufacturing side of the highly successful Tom Courts business, based in the Raith Centre on High Street.

John, who stays in McKay Drive, Dunfermline, said that he was just so pleased to be given a chance by Tom Courts. "When I left school I had nothing at all in the way of qualifications and tried a cooking course at Carnegie College but it was not something I could adjust to, so when I saw the advert for an apprentice butcher with Courts I thought I would give it a go.

"It has turned into the best move I have ever made.

"Being a butcher is something I have really taken to and the assistance I have received from Tom and other members of staff, has been a massive help to me.

"Getting to the final of the British Young Butcher of the Year competition is something I could never even have dreamed about four years ago but I am really looking forward to the experience I will gain in London."

Added Tom Courts, "John is an example of a young lad who may have left school without any qualifications but who has worked really hard as an apprentice, become a very good butcher and made the most of his talents."
